Cauliflower Puree with Truffle Oil

Shopping List

  • 1 cauliflower
  • 3 tablespoons olive oil
  • 1 cup So Nice Original or Unsweetened
  • 2 tablespoons truffle oil
  • 1 tablespoon white wine vinegar
  • Salt


  • Coarsely chop the cauliflower and simmer in a pan of salted water until tender.
  • Heat So Nice in a saucepan.
  • Drain the cauliflower
  • Mash with So Nice
  • Mix together with oil, vinegar and salt.
  • Serve as you would mashed potatoes.
