Coco Chia Overnight Oats

Shopping List

  • 1 cup (250 mL) So Nice Organic Almond Unsweetened Coconut
  • 1 cup (250 mL) large flake rolled oats (gluten free if necessary)
  • 1 Tbsp (15 mL) chia seeds or flax meal
  • 1 Tbsp (15 mL) maple syrup or agave nectar


  • In a medium sized bowl, whisk together all ingredients until well combined.
  • Divide oat mixture into two mason jars or containers with tight fitting lids. Close and refrigerate overnight, or at least for 4 hours, before enjoying.

Tip: Before serving, top oatmeal with seasonal fruit and nuts for added flavour and crunch. Try chopped apples and pecans, peaches and toasted hazelnuts or strawberries and sliced almonds.

Variation: Use So Nice Organic Almond Original or Unsweetened and add an 1/8 tsp (0.5 mL) vanilla extract.

Makes 2 servings

**Can be served hot or cold. To warm, heat on stovetop or in microwave and add a little extra almond milk.
